Ingredients
- ¼ cup whole-milk plain Greek-style yogurt
- 2 tablespoons chopped fresh flat-leaf parsley
- 1 tablespoon chopped fresh tarragon
- 1 tablespoon chopped fresh chives
- 1 tablespoon mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1 teaspoon drained nonpareil capers
- 1 medium clove garlic, minced
- ¼ teaspoon salt plus ⅛ teaspoon, divided
- 1 cup cooked white quinoa
- 1 15-ounce can no-salt-added chickpeas, rinsed
- 1 medium carrot, shaved into ribbons
- 1 cup thinly sliced red cabbage
- ½ cup thinly sliced scallions
- ½ medium avocado, sliced
Instructions
STEP 1
Combine ¼ cup yogurt, 2 tablespoons parsley, 1 tablespoon each tarragon, chives, mayonnaise, lemon juice and water, 1 teaspoon capers, the minced garlic and ¼ teaspoon salt in a mini food processor. Process until smooth, scraping down the sides as needed, about 1 minute.
STEP 2
Divide 1 cup quinoa between 2 bowls. Top with the rinsed chickpeas, carrot ribbons, 1 cup cabbage, ½ cup scallions and the sliced avocado. Sprinkle each bowl with a pinch of salt. Drizzle with the dressing.
STEP 3
Tips Tip: Shave the carrot into ribbons using a vegetable peeler. This creates tender strands that blend easily with the other ingredients and don’t overpower the bowl. Make Ahead Tips: To make ahead: Refrigerate dressing and prepared components separately in airtight containers for up to 3 days. Assemble bowls just before serving.
